Torta pancake di mele

Buongiorno amici,
che strano scrivere di domenica mattina…Eppure non potevo fare a meno che condividere subito questa colazione che ci siamo concessi oggi. Sapete quanto io ami i pancakes. Ecco, questo praticamente è un mega pancake con le mele. Con la scusa di smaltire un bel cesto di golden trentine che ho preso dalla nonna, sto provando una serie di torte a base di mele.

La consistenza di questa torta è proprio quella di un pancake, in fondo gli ingredienti sono più o meno gli stessi. Quindi se anche voi il weekend vi rilassate con lunghe e abbondanti colazioni… dovete provarla assolutamente!

Se non ve la finite a colazione, è ottima anche come merenda, con una tazza fumante di tè o caffè americano. Provatela anche con una colata di sciroppo d’acero. Goduria allo stato puro!! 🙂
Ingredienti per una teglia da 20 cm:
650 g di mele
100 g di farina
100 ml di latte
30 g di zucchero
2 uova
1 cucchiaino di lievito
1 pizzico di sale

In una ciotola setacciate la farina con il lievito, lo zucchero e un pizzico di sale.
Unite il latte e i tuorli e mescolate in modo da amalgamare bene gli ingredienti. Aggiungete le mele tagliate a fettine sottili e mescolate.
In un’altra ciotola montate a neve gli albumi e incorporateli delicatamente al composto mescolando dal basso verso l’alto.
Rivestite con carta da forno uno stampo da 20 cm, versatevi l’impasto e cuocete a 180°C per circa 40 minuti.
Lasciate raffreddare nello stampo, prima di sformare e cospargere con zucchero a velo.

    Non deve essere facile decidere se voler essere un pancake o una torta di mele… ma solo per una questione di etichetta, perché l'aspetto é magnifico!
